Hola amig@s! these last four days has been pouring in Tulum. Last Saturday I had to go to Cancun, and was also pouring. I was wet as a soup and catched a terrible cold! you know: running nose, coughing, temperature, well, you get the picture!

When I was feeling miserable I remembered every time I was this kind of sick, my grandma prepared me a Caldo de Pollo, and, I don´t know if,  because she made it with so mucho love or what, but I get sooo much better in no time. So, I did the same yesterday and today I´m back at work! here is Meyin´s version for Caldo de Pollo:

Cut in small size 1/2 medium onion and 3 garlic cloves. In a big and deep pot add 5-6 oil spoons, and once they are hot add the onion, when it turns white add the garlic. When you start to smell the garlic add the chicken in pieces, and fy it just a bit, until it turns white. Now add 3 liters of water and let it boil. Once it starts boiling, with a skimmer get the froth that forms at the top of the broth, because this is the impurity of the chicken. Once the chicken is half cooked, add  carrots, celery, zucchini, potatoes, ejotes (green beans with the vaine) all these vegetables (except the green beans) cut them in medium pieces. Add oregano, pepper, a very tiny touch of clove, cilantro and salt. Spice it at your pleasure. Once is ready, served with very fine cut onion and cilantro, avocado, lemon and chile powder.
