In rainy days, I remember my Grandma´s arroz con leche, and how good it made me feel. This only dish was able to cure everything, from a cold to a heartache!
Arroz con leche can be served as a dessert after lunch or dinner,but it also makes a great treat for breakfast. It’s the perfect dessert for a rainy day, or any day of the week!
In medium saucepan, put 2 1/2 cups of water, add 1 cup of rice, a cinnamon stick and bring it to boil (use medium heat). Once starts to boil, cover the saucepan and low the heat. Let simmer until liquid is almost completely absorbed , about 10 minutes.
Pour 1 can of evaporated milk and 1 can of sweetened condensed milk and 1 cup of water ( if use raisins, add them now). Cover and let simmer over low heat until the milk starts to bubble. Simmer uncovered for another 10 to 15 minutes, stirring occasionally. To serve, sprinkle with ground cinnamon. Serve warm or refrigerate 2 hours and serve it cold.
